
Recipe: Spinach Fatayer
Flaky triangles stuffed with savory spinach filling
Indulge in our irresistible handmade spinach pastries, featuring a generous filling of savory spinach wrapped in golden, flaky dough. Each pastry is baked to perfection, offering a warm, satisfying bite with a deliciously crisp texture. Ideal for sharing at parties, serving as a crowd-pleasing appetizer, or enjoying as a flavorful snack on the go. Each pastry measures approximately 3 inches, boasting a vibrant golden color that promises freshness and quality in every bite.
Ingredients (Makes 12):
250g flour
125ml water
1 tsp salt
1 tsp sugar
1 tbsp summac
2 tbsp olive oil
200g fresh spinach, chopped
1 small onion, finely chopped
Salt, pepper, and a pinch of nutmeg
Instructions:
Make dough: mix flour, salt, olive oil, and water. Knead and rest 30 min.
Sauté onion, spinach, and seasonings until soft.
Roll dough, cut into circles, fill with spinach mixture, fold into triangles, seal edges.
Bake at 180°C for 15–20 min until golden.
Tips & Plating:
Serve warm with a side of labneh or hummus
