Recipe: Spinach Fatayer

Indulge in our irresistible handmade spinach pastries, featuring a generous filling of savory spinach wrapped in golden, flaky dough. Each pastry is baked to perfection, offering a warm, satisfying bite with a deliciously crisp texture. Ideal for sharing at parties, serving as a crowd-pleasing appetizer, or enjoying as a flavorful snack on the go. Each pastry measures approximately 3 inches, boasting a vibrant golden color that promises freshness and quality in every bite.

Ingredients (Makes 12):

  • 250g flour

  • 125ml water

  • 1 tsp salt

  • 1 tsp sugar

  • 1 tbsp summac

  • 2 tbsp olive oil

  • 200g fresh spinach, chopped

  • 1 small onion, finely chopped

  • Salt, pepper, and a pinch of nutmeg

Instructions:

  • Make dough: mix flour, salt, olive oil, and water. Knead and rest 30 min.

  • Sauté onion, spinach, and seasonings until soft.

  • Roll dough, cut into circles, fill with spinach mixture, fold into triangles, seal edges.

  • Bake at 180°C for 15–20 min until golden.

Tips & Plating:

  • Serve warm with a side of labneh or hummus
